AZUL at Home

Mother's Day is May 13th but Mom would make this for every special occasion and is usually the hit of the party. This recipe goes out from my mom to all moms everywhere! Enjoy!


Leche Flan

10 each large egg yolks (save the whites for another recipe)

1 small can condensed milk

1 cup evaporated milk

1 cup granulated sugar

1 tsp vanilla extract


Equipment

Stovetop steamer

Heat proof 8" mold or casserole dish that would fit in your steamer


  1. Over medium heat, put the sugar in a small sauce pan and cook to a light caramel. Once it turns into caramel, immediately pour into your mold. Tilt your mold until caramel evenly coats the bottom. Chill in refrigerator until caramel sets (approx. 5 minutes).
  2. While caramel is chilling, step up steamer and have ready.
  3. In a medium mixing bowl, combine egg yolks and condensed milk and mix thoroughly until smooth and fully incorporated. Add evaporated milk and vanilla extract and mix until fully incorporated again.
  4. Remove chilled caramel from the refrigerator, pour egg/milk mixture over the top and cover with aluminum foil.
  5. Steam flan for 30-35 minutes.
  6. Remove flan and cool on counter top for 15 minutes then transfer to refrigerator to chill all the way through.
  7. Once completely chilled, turn mold upside down onto a platter and serve.
